活性炭吸附減除黃酒中的氨基甲酸乙酯

摘要:針對中國傳統黃酒中高含量氨基甲酸乙酯(EC)的問題,從釀酒行業常用的7種不同吸附材料中比較篩選EC吸附減除性能較為優良的材料,并對其黃酒中EC的吸附效果進行較系統的考察。結果表明:活性炭可有效地吸附減除黃酒中EC,采用柱式動態吸附可以得到更好的EC減除效果。不同材質的活性炭中,椰殼質小顆?;钚蕴亢湍拘蓟钚蕴康腅C減除效果相對更好,處理10倍柱體積黃酒,EC減除率均大于85%??刂铺幚砹魉偌盎钚蕴康乃峄梢哉{節吸附效果。對于EC濃度較高(> 600 ppb)的黃酒樣品吸附處理后EC去除率也可達60%左右。隨著處理量的增加,活性炭的吸附作用逐漸降低,吸附處理對黃酒主要理化指標影響不大,但風味物質含量變化明顯。該方法可作為降低黃酒中高EC含量的一種應急措施。

Reduction of ethyl carbamate in Huangjiu by adsorption with activated carbon
Abstract:Based on the removal efficiency of ethyl carbamate (EC), seven different adsorption materials commonly used in the alcoholic beverage industry were tasted to reduce EC content in traditional Huangjiu with high EC concentration, and the adsorbent with best adsorption efficiency was further investigated. The results showed that activated carbon can adsorbed EC in Huangjiu effectively, and a better reduction efficiency of EC can be obtained using dynamic column adsorption with it. Among different activated carbons, the coconut shell granular activated carbon and woodchip activated carbon provided relatively more EC reduction. After adsorption treatments of Huangjiu samples with 10 bed volume (BV) by them, EC of more than 85% were removed. The adsorption efficiency of EC can be modulated by controlling the flow velocity and acid modification of the activated carbon. Even for the Huangjiu with high concentration of EC (more than 600 ppb), 60% EC can be removed after adsorption by activated carbon. However, with the increase of treatment volume, the adsorption efficiency of EC would be decreased. The adsorption treatment by activated carbon made a little difference in primary parameters of Huangjiu, but obviously changed the contents of flavor substances. This method can be used as a contingency measure of reducing high levels of EC in Huangjiu.
